Makarnalık buğdaylar, dünyada belli bölgelerde yetiştirilmekte ve ekmeklik buğdaya göre daha yüksek fiyatla alıcı bulmaktadır. Makarnalık buğdaylar kromozom yapıları bakımından tetraploid bitkiler olup, kalite özellikleri ve kullanım alanları bakımından ekmeklik (T. Aestivum ve T. Compactum) buğdaylardan çok farklıdır. Makarnalık buğdayların ana kullanım şekli makarna olup, makarna üretimi yanında bulgur, kuskus, irmik ve değişik ekmek çeşitlerinin üretiminde de kullanılmaktadır.

Durum wheat is the second most used human food after bread wheat. Durum wheat is produced at specific regions of the world and it finds buyers with higher prices compared to bread wheat. Durum wheat is a tetraploid plant in respect of its chromosome structure, and it is extremely different than bread wheat (T. Aestivum and T. Compactum) in respect of its quality properties and areas of use. The main area of use for durum wheat is pasta, and besides pasta production it is used in the production of bulgur, couscous, semolina and various bread types.

With approximately 300 mills with capacities ranging from 50 to 600 tons per day, agricultural production, especially wheat and rice production, is not enough for consumption and the need is satisfied by means of import.
