Being one of the three most consumed grains by humanity; corn can be part of our table in two ways, in nature form or already industrialized. Around the world, maize has been increasingly used in the food base of mankind, directly or indirectly.

The need to produce more food for a world population in continuous growth and the need to preserve natural resources, has been driving the modernization of the maize milling industries, seeking greater production combined with higher quality, efficiency, food safety and processes.

In the early days, when people wanted to make corn meal, they simply grinded the grain and could make polenta, angu (brazillian polenta) and other foods.

Nowadays, with the constant increase in consumption of corn and its derivatives, the dry milling industries are modernizing their processes, making them simpler, more compact and more efficient.

The modern industry has required more modern equipment for the various stages of the industrial process such as control, cleaning, degermination, milling and others. Each step is an important part of the overall process.

Pre-cleaning of the grain helps better storage of the corn, weighing by electronic scales informs the movement of the mass of corn and its derivatives, cleaning ensures a better degermination condition, since you will work with more pure corn.

In the degermination stage, there is the important process of separation of the endosperm from the other parts of the corn, pericarp, germ and tip. This stage of the process is very important, being considered as the heart of the mill and allowing the optimization of the next step. Still at this stage the fat content of the products from the endosperm can be reduced.

Between the degermination and the grinding you can get several different products from the endosperm, such as:
• Hominy for expansion by burst, product for cooking sweet or salty recipes and others.
• Broken hominy for flakes, product for cooking sweet and salty recipes.
• Course grits for fine flakes, extrusion and others.
• Medium grits for fine flakes, extrusion and others.
• Fine grits for fine flakes, extrusion and others.
• Course and fine flour for cookies, cakes, breads and others.
• Cream for pasta, biscuits, cakes, breads and others.
The application of these products can be further diversified in various other forms such as flotation in the mining process. In addition, there are processes such as gelatinization, nixtamalization and pre-cooking.
The most important aspect to consider is the correct use of degermination and an efficient milling diagram, configured according to the product or products required. The industrial efficiency in the processing of corn goes through there.
